What is Bean-to-Bar Craft Chocolate?
Bean-to-bar craft chocolate is the process of importing cocoa beans and making chocolate from scratch. Inspired by the craft coffee and craft beer movements, bean-to-bar chocolate embodies small-batch production, transparency, and superior quality.
At Bullion, we are one of only a handful of UK companies to craft chocolate this way. Taking a hands-on approach, we seek to discover the “hidden gold” in cacao - the distinct flavour nuances, or terroir, that beans from carefully selected farms can produce.
Each single-origin batch we craft is strictly limited in number, representing a unique expression of a particular farm, harvest, and year. No two bars are ever the same.

"I feel most people are barely scratching the surface when it comes to chocolate. The chocolate we’ve come to expect is far from what it could be. For years, the true flavours of cacao have been masked to create a consistent sweet fix for the masses.
The truth is, chocolate is far more complex. Bean varieties, harvests, origins, and post-harvest processes all have a huge impact on the final taste. No two bars are ever quite alike, which opens up a side of chocolate many people don’t even know exists.
